Monday

My meatless option this Monday is one of my childhood favorites: Cabbage and Noodles! It’s a budget-friendly comfort food. If you have teenagers learning how to cook, this dish is perfect for them to make!

Tuesday

Instead of tacos, on this Tuesday we are making quesadillas. Packed with veggies and fried up on a cast iron griddle pan, these Vegetable Quesadillas are crispy and delicious!

Wednesday

Turn Boursin cheese into a creamy and flavorful sauce and mix it with any bite-sized pasta. This simple dinner is packed with flavor and bound to please anyone! Make this Boursin Pasta for a mid-week meal.

Thursday

Don’t overlook ground turkey. Use it to make juicy and flavorful Turkey Meatballs, a leaner alternative to the classic beef version. Plus, they are baked in the oven, so no need to stand by the stove and flip them. Easy peasy!

It’s Spring, and all of the home improvement stores have their garden sections packed with plants. So let’s go and fill our car trunks with plants and pots to bring Spring to our gardens. Leftovers or takeout for dinner today!

Sunday

The name, Chicken Florentine, may sound fancy, but there is nothing complicated about this dish. Chicken fillets are cooked in a pan and served with a delicious creamy sauce with garlic, Parmesan cheese, and spinach.

Bonus – dessert!

My classic Spring dessert is this easy Lemon Cake. It’s fluffy and soft crumb is bursting with zesty citrus flavor. I top it with freshly whipped cream instead of buttercream. I find that it complements the light cake much better.
