“Sizzling Beef” Steak Fried Rice

Steak Fried Rice is a bit special because it’s rare to see fried rice made with chunks of beef! With marinated, tenderised beef pieces “sizzled” until golden, this is an excellent recipe to make with economical cuts like sizzle steak, minute steak, and pre-cut stir fry strips.

This is not the first time I’ve done a beef fried rice. But it’s the first time I’ve shared any rice dish with steak pieces rather than mince (ground beef) jumbled throughout the rice. In fact, it might be the first time I’ve ever eaten a fried rice with pieces of beef in it!

Mind you, I’m not claiming this as an original invention. I’m just saying it’s different from the usual fried rice made with chicken or prawns/shrimp. It’s a bit special. And it is really tasty. It scored highly with the team at RecipeTin Meals, regular recipients of my trials (and errors) in the kitchen. Those tasty little marinated bits of beef “sizzled” until caramelised really makes it!

Keeping little bits of steak tender

Little bits of steak overcook in a flash – as in, less than 90 seconds. So the only way to make this truly enjoyable so we bite into beef that’s caramelised on the surface but tender inside is to marinate and tenderise it. Otherwise, it’s dry cardboard for dinner tonight!!

While marinating adds flavor, regular marinades won’t keep the beef soft. To achieve that velvety texture you get in Chinese restaurant beef stir fries, we need to velvet the beef.

There’s various ways to do it, but the method I find the easiest for home cooking is to use baking soda (bi-carbonate soda), a tried-and-true technique I’ve shared that many readers love! It’s easy, cheap, and if you’ve never done it before, it’s a game-changer.

Sizzling beef fried rice

Ingredients for Sizzling Beef Fried Rice

Here’s what you need for this fried rice. This dish is Thai flavoured, using fish sauce and oyster sauce as shortcut flavour bumps like in classic Thai Fried Rice.

Beef and marinade

  • Beef – I like to use rump steak (US: top sirloin) because it’s easy to cut into small rectangles that I want for this recipe so you get nice little bites, it’s got good beef flavour and texture for a dish like this. There’s no need to splurge on expensive beef, the marinade does wonders tenderising.

    Porterhouse/sirloin (called New York Strip in the US, among other names) is similar but it’s a little pricier so I tend to stick with rump.

  • Baking soda (bi-carbonate soda) – The magic ingredient to “velvet” the beef which keeps it nice and tender, fast becoming the world’s worst kept Chinese restaurant secret! Without, the small thin bites of beef would overcook and dry in 90 seconds. We only use a tiny amount so you can’t taste it. See Velveting Beef recipe for more information on this technique.

  • Dark soy sauce – stains the beef a rich mahogany colour and adds soy flavour. Substitute with light or all-purpose soy sauce, though the flavour and colour is not as intense.

  • Oyster sauce – shortcut sauce for instant flavour, adding savoury, sweetness and thickens the sauce. Substitute with vegetarian oyster sauce (for shell-fish free, available in Asian and large grocery stores these days) or Hoisin sauce (alters flavour but plays similar role).

  • Water – To thin the marinade enough to coat all the beef, and also to dilute the marinade a bit (I found the beef too salty in first iterations of this recipe).

  • Garlic – Like bacon, it just makes everything better!

  • Sugar – Just a smidge, for flavour and wonderful caramelisation. White or brown is fine.

Other beef cuts and marinating time

This recipe is an excellent one to use for just about any cut of beef because the tenderising marinade will transform even the most economical cuts into soft, velvety, flavour infused beef bites. Here’s a list of other common cuts that can be used, and the recommended marinating time.

  • Other steaks – Sirloin/porterhouse (New York strip), t-bone, flank, skirt, hanger, bavette – excellent! 1 hour marinade.

  • Pricey steaks: Scotch (rib-eye) and tenderloin – pricier, so seems to be a waste to use it in a recipe like this, but it absolutely works. 1 hour marinade.

  • Thin and cheap sizzle steak / minute steak / schnitzel – excellent! Marinade for 4 hours minimum.

  • Pre-cut “beef stir fry strips”, round steak – 4 hour marinade.

  • Slow cooking cuts like chuck, brisket, oyster blade, beef short rib (boneless) – marinade 24 hours, be sure to slice thin. The texture of tenderised slow cooking cuts of beef is not quite the same as steak cuts, but it is still soft and tender, many of them have excellent beefy flavour (like short rib) and I would not hesitate to use any of them if that’s all I had!


DAY-OLD COLD RICE

You will need 4 cups of day-old cooked rice. You’ll need 1 1/2 cups of uncooked rice (1 cup uncooked rice = 3 cups cooked). I use long-grain rice.

Beef fried rice sauce

Here are the ingredients for the sauce. Only three – because the fish sauce and oyster sauce are full flavoured, plus we get flavour in the rice from the beef too!.

  • Fish sauce – Has more depth of flavour than soy sauce, but can be substituted with regular or light soy sauce. Doesn’t taste fishy once cooked!

  • Oyster sauce – See above beef marinade for description and substitutions.

  • Sugar – To balance the flavour of the saltiness you get from the fish sauce. Any type of sugar is fine here.

💡This fried rice sauce is intentionally more bold flavoured than a typical Chinese Fried Rice because I think it suits the beef better as beef has a stronger flavour than chicken and prawns/shrimp which are the usual proteins used in fried rice.


THE ADD-INS

I used green onion and green beans because I was deliberately going for a green-add-ins fried rice in this recipe. Just to do something different from the typical kaleidoscope of colours you see in fried rice (carrots, corn, peas!). So feel free to substitute the green beans for other vegetables, and the green onion for a regular onion.


How to make Beef Fried Rice

The beef needs 1 hour minimum to marinate but you can leave it overnight. Note: some alternative cuts of beef suggested need a minimum of 4 hours marinating time (ie slow cooking cuts and some of the more economical cuts). See the beef section above or recipe notes for marinating times.

1. MARINATING THE BEEF

  1. Cut the beef into 1.5cm / 0.6″ strips

  2. Small squares – Then cut those strips into square(ish) pieces about 3-5mm / 0.2″ thick, so you have lots of thin square(ish) bits of beef.

  1. Mix the beef marinade ingredients in a bowl.

  2. Marinade – Then add the beef and toss to coat. Marinade for 1 hour minimum, up to 24 hours. I find the extra time doesn’t add anything, it doesn’t make the beef any more tender nor does it add more flavour because the pieces are so thin, the flavour fully penetrates in an hour.

    ⚠️ Remember – If you are not using rump / top sirloin, check the recommended marinating time. See Note 1 of the recipe card or the blue box above in the beef section.

2. PREPARING OTHER INGREDIENTS

  1. Green onion – Cut it into 1.5cm / 0.2″ lengths and separate the firmer white parts from the green parts. We add them into the pan at different times as the white part takes much longer to cook than the green part.

  2. Fried rice sauce – Put the ingredients in a small bowl and mix.

  1. Cutting green beans – Trim the green beans then cut into 1.25cm / 1/2″ pieces.

  2. Scrambled egg – Whisk the ingredients then set aside.

OK! Prep done, the cook part is nice and quick. Just wait until that beef hits the pan, it smells soooo good!

3. COOKING THE FRIED RICE IS FAST!

This fried rice is cooked in a large pan instead of a wok because it’s a big-batch of fried rice (enough to serve 4 as a meal) that is too much to fit in a wok. If you try to cook this in a wok, the rice and beef will just “stew” and get sweaty instead of caramelised and toasty. 🙂

  1. Large pan – Heat 2 tablespoons of the oil in a large non-stick pan over high heat. Mine is 30cm / 12″ wide, and is one of the most frequently used cookware in my kitchen (it’s a Pyrolux, no that is not an affiliate link, and sadly not very available outside of the Australia).

  2. Caramelised beef – Add the beef and cook until the surface seals, about 1 1/2 minutes. Then add the white part of the green onion and beans and cook for about 1 minute until the beef is caramelised. Add the garlic just before the end (if you add it earlier, it will burn).

  1. Rice and sauce – Add the rice then pour the sauce over. Toss for about 1 1/2 minutes to disperse the sauce through the rice and give it a chance to get nice and toasty.

  2. Clear space in the pan for the egg. This is actually the traditional way egg is cooked for fried rice in Thailand, so it’s not just me being lazy! 🙂

  1. Scramble egg – Add and swirl 1/2 tablespoon of oil in the cleared space. It will heat almost instantly. Then pour the egg in and once it sets a bit, lazily scrape and swirl through it to scramble the egg.

    Don’t worry if some of it gets stuck (like mine does), just scrape it off and enjoy crispy little egg bits in your rice!

  2. Finish and serve – As soon as the egg is almost cooked, toss it through the rice with the green part of the green onion, which wilts very quickly. Then transferring into a serving bowl or divide between bowls, and get stuck into it!

Serving as a meal

I want to tell you that this can be dinner by itself. But to me, it’s too light on the vegetables to be considered a completely meal. My mother did such a good job of brain washing me as a kid! 😖

For a quick option, just add wedges of tomato and hunks of cucumber on the side, no dressing required. Before you dismiss that as boring, it’s not! This fried rice is quite full flavoured so the freshness of plain vegetables is welcome. Also, it’s legit Thai street food style! Plain tomato and cucumbers is a common addition to plates of noodles and rice in Thailand, and as noted above the sauce used in today’s recipe is from my Thai Fried Rice.

However, if you want something a little more interesting (and I get it), here are a few simple Asian salads that you could add on the side:

The Spicy Asian Zucchini gets a special mention – such a delicious way to get a massive vegetable fix – and the Asian Slaw is a personal favourite as it’s a great standby to have in the fridge. If you’re really pressed for time, just buy a pre-cut slaw mix then toss with the dressing in the Asian Slaw recipe.

Or – by pass all that and just enjoy a big steamy bowl of the fried rice for dinner. Those juicy beef bits are the best! Try to resist picking out more than your fair sharing and sneaking it into your bowl. (Who me?😇) – Nagi x

With marinated, tenderised beef pieces “sizzled” until golden (aka – your favourite Chinese restaurant Sizzling Beef!), this is an excellent recipe to make with economical cuts like sizzle steak, minute steak, and pre-cut stir fry strips. The beef is caramelised on the outside, and tenderised so it doesn’t overcook. It’s so soft and velvety, you will be shocked!

ABBREVIATED RECIPE:

  • Marinate beef 1 hour. Cook beef in 2 tbsp oil on high in a large pan until lightly seared, add white part of green onion and beans, cook until beef is caramelised, adding garlic towards the end. Add rice and sauce, toss well. Scramble egg on side of pan, toss through green part of green onion. Eat!

FULL RECIPE:

  • Marinade & tenderise beef – Mix the marinade ingredients in a bowl then add the beef and toss well. Set aside for 1 hour (up to 24 hours), or the time specified in Note 1.

  • Sauce – Mix the Sauce ingredients. Set aside.

  • Whisk the Scrambled Egg ingredients. Set aside.

  • Sizzle beef – Heat 2 tablespoons of oil in a large non-stick pan over high heat (mine is 30cm/12″, see Note 8 for why no wok). Add the beef and cook for 2 minutes until the surface is sealed. Add the garlic, white part of the green onion and beans. Cook for another 1 minute until the beef is caramelised, stirring constantly so it doesn’t catch and burn.

  • Rice and sauce – Add the rice and sauce. Toss for a good 1 1/2 – 2 minutes to give the rice a chance to get toasty.

  • Scramble egg – shove all the rice to one side and shif the pan so the empty space is set over the flame. Add the remaining 1/2 tablespoon oil and spread. Pour the egg, swirl, give it 10 seconds to partially set then do lazy swirls with your spatula to scramble it softly. Once mostly cooked, quickly (but gently!) toss it though the rice.

  • Serve – Add the green part of the green onion and toss through. Divide between bowls and enjoy!

Recipe Notes:

  • Thin sizzle steak / minute steak / schnitzel – excellent! But marinade for 4 hrs minimum.

2. Dark soy sauce – Sold in bottles labelled “dark soy sauce” and gives colour to the beef. Substitute with regular or light soy sauce.
3. Oyster sauce – substitute with vegetarian oyster sauce (for shellfish-free) or hoisin sauce (different flavour but similar thickness, sweetness, flavour depth).
4. Baking soda – Chinese restaurant trick to tenderise beef, if you’ve never tried it, this will blow your mind! I know 3/8 teaspoon is an odd measurement (see in post for explanation), you don’t need to be exact so just use a heaped 1/4 teaspoon (if you don’t have a 1/8 teaspoon measure).
5. Cold cooked rice left in fridge overnight = dries it out = legit crumbly fried rice texture. Fresh cooked rice = sticky fried rice = just not the same!
Long grain rice is my first choice because it’s the least sticky of rice types, though any type of white or brown rice will work here. I’d avoid designer rice and faux rice (wild rice, black rice, cauliflower rice).
Fried rice emergency? I get it. 🙂 Cook rice, fluff, spread out on tray, mostly cool on counter then fridge to fully cool as long as you can.
6. Vegetables – Greens beans can be substituted with any veg that can be pan-cooked in a couple of minutes, like carrots, zucchini, corn (mixed frozen diced veg suitable too). Green onion can be switched with half regular onion, diced.
7. Fish sauce has more flavour than soy sauce, but can be substituted with regular or light soy sauce. Doesn’t taste fishy once cooked!
8. Pan rather than wok – Yes! Reason is that this is a big-batch of fried rice that will serve 4 as a meal. Too much to cook in a wok in one go, the rice and beef will just “stew” and get sweaty instead of caramelised and toasty. 🙂
Leftovers will keep for 3 days in the fridge or 3 months in the freezer (fully cool then freeze).

Very different when compared to the sizeable bulk of the extra buoyancy life jacket the model was previously sporting while during his rehabilitation phase:

Though much less bulky, the High Performance Life Jacket still provides sufficient buoyancy to give the models’ owner a peace of mind as the model is well into his golden years (12!) and showing early signs of mobility issues that come with old-age-creaky-bones.

While the model misses the days of romping around naked on the beach, no life jacket, no matter how bulky, is going to dampen his spirits!

On a serious note: I originally got the High Performance Life Jacket several months ago when Dozer was still mid-rehabilitation, but ended up returning it because I didn’t think it provided enough buoyancy for him. But he’s come such a long away, even being praised by the Magic Dog Doctor for his progress (it’s like getting a gold star at school!), that I decided to give the High Performance Jacket a go again.

He’s so much happier with more freedom of movement!

Healthy Swedish Meatballs

Most weeks I try to do a weekly meal prep day. This helps me get ahead and have time for other things (like taking care of 6 kids!). Swedish meatballs can be a good make-ahead recipe for anyone with hungry mouths to feed. They’re high in protein and cooked in a flavorful creamy sauce.

The Best Swedish Meatballs

What do you think of when you hear Swedish meatballs? Maybe you think of Sunday dinner at Grandma’s or Ikea. They’ve been a staple in Sweden for hundreds of years. Swedish meatballs are traditionally served with lingonberry jam. The more Americanized version instead features a creamy gravy made from a cornstarch or all-purpose flour roux.

The meatballs are made with a mix of ground pork and ground beef with a hint of ground nutmeg and served over egg noodles. Other ingredients can include everything from Worcestershire sauce to Dijon mustard.

A Fresh Twist

My take on the classic Swedish meatballs is a little different, but just as flavorful. They use all ground beef and are flavored with seasoned breadcrumbs and minced parsley instead of nutmeg. And instead of heavy cream, I use a mix of cream cheese and high-protein Greek yogurt. They’re the ultimate comfort food!

Some recipes use the crockpot or slow cooker but I prefer to make these on the stove. The kids are I will eat the entire recipe in one sitting, so be sure to double or triple it if you want leftovers. If you want to meal prep, then make the meatballs ahead of time and freeze for later. You can reheat the frozen meatballs on the stove and once they’re thawed, simmer them in the cream sauce.

The sour cream and Greek yogurt add more of a tart flavor, but it balances out with enough salt and pepper.

What to Serve With Swedish Meatballs

These are most commonly served with egg noodles but they’re not necessary. My family loves them with mashed potatoes. Try them with these creamy garlic mashed cauliflower “potatoes” for a lower-carb version. You could even try them with spaghetti squash.

Swedish Meatballs Recipe

This healthy twist on classic Swedish Meatballs is tender and flavorful. They’re simmered in a cream sauce for a comforting meal. Perfect over mashed potatoes or served as a crowd-pleasing appetizer.

  • 1 TBSP olive oil
  • 1 small onion (finely minced)
  • 1 clove garlic (minced)
  • ¼ cup fresh parsley (minced)
  • 1 pound ground beef
  • 1 large egg
  • ¼ cup seasoned bread crumbs (gluten-free or homemade)
  • ½ tsp salt (Kosher)
  • tsp ground black pepper
  • 2 cups beef broth (reduced sodium)
  • 3 oz cream cheese (reduced fat)
  • ½ cup plain Greek yogurt (or sour cream)
  • chopped fresh parsley (for garnish)
  • Heat olive oil in a large skillet over medium heat. Add minced onion and garlic, sauté until soft and fragrant.

  • Stir in minced parsley and cook for an additional minute. Remove the skillet from heat and let the mixture cool.

  • In a large bowl, combine ground beef, cooled onion-garlic mixture, egg, seasoned breadcrumbs, kosher salt, and black pepper. Mix the meatball ingredients well.

  • Shape the meat mixture into small, bite-sized meatballs.

  • In the same skillet, brown the meatballs on all sides over medium-high heat, using additional olive oil if needed. Cook until fully cooked through.

  • Remove meatballs from the skillet and set aside.

  • Pour beef broth or beef stock into the skillet and simmer.

  • Add cream cheese to the simmering broth, stirring continuously until melted and smooth.

  • Stir in Greek yogurt (or sour cream) until well combined.

  • Return cooked meatballs to the skillet, coating them in the creamy Swedish meatball sauce.

  • Simmer the homemade meatballs over low heat until heated through.

  • Season with additional salt and pepper to taste.

  • Serve hot, garnished with chopped fresh parsley.

Mount Olympus is the highest mountain in Greece and the home of the Greek gods in Greek Mythology. Mytikas is the tallest summit, rising to a height of 2,917 meters. If you’re feeling adventurous, you can try to hike to the top of this mythical summit for uninterrupted views of Greek landscapes. 

Bear in mind that hiking to the top of such a tall mountain is an activity reserved for the most experienced mountaineers. Excursions to lower areas of the mountain are available for other people. It’s still a rewarding experience and you get to learn so much about the mountain’s background as the seat of the gods.

Sarakiniko Beach is by far the most popular on the island. The white rocks and caves feel like you’re standing on the moon, and it’s almost surreal that you’re actually on an island in Greece. The nearby Papafragas Caves are worth exploring, and venturing to other areas of the island is best if you want to avoid the crowds.
What’s most special about this island is that it’s the place where Venus de Milo was discovered. Yes, Antioch’s iconic sculpture was found by a farmer on this magnificent Cyclades island.

We love to taste local wine in tavernas, and wine tastings are part of the whole Greek dining experience.

Greek food is Mediterranean and fresh ingredients are key to the Greek flavours. What I love most about this cuisine is that it’s so varied. While fish and seafood is most popular in the south especially on the islands, the north is known for heartier dishes. Lamb is as popular as fish but vegetables are more popular than meat. Greek food is vegetarian friendly but you might struggle to find local vegan options as the Greeks love to add feta cheese to everything. And drizzle olive oil, I’m not complaining. Tasting local wine is part of the travel experience in Greece, it enhances the food and the views.

10. Party on Mykonos

It’s a big island, and there are definitely other things to do there if you want to do more than just party. Waterfalls, ruins, and historic landmarks with stunning sights are all available in Mykonos as well. But in my experience, the history is more of an afterthought on Mykonos, so do consider other destinations (like Santorini or Naxos) if you’re more interested in exploring than dancing.

12. See The Shipwreck Beach on Zakynthos

Shipwreck Beach is a legendary sight. It’s used in virtually all promotional material for Greece, and I doubt there’s a person who hasn’t seen the iconic image at least once. This famous beach is on the island of Zakynthos, and until 2023, you could reach it on boat tours and swim in the sea.
That’s no longer the case because there is a danger of landslides, and it’s still unknown whether the beach will again open to the public. The good news is that you can still see the beach from a platform on the cliffs.
The view is even more dramatic from above, and the only difference is that you can’t get close to the shipwreck But that just gives you an excuse to return to Navagio Beach when it’s once again safe to visit. 

Practical Information

Zakynthos is an Ionian Island, accessible by ferries from other islands and Kyllini on the mainland. It’s also serviced by an airport and reachable by flights. 

13. Unesco World Heritage Site: Acropolis of Athens

The Acropolis of Athens is a UNESCO World Heritage Site and probably the most famous historical landmark in Greece. It’s an attraction you must visit when traveling to Athens, as it really is the most iconic landmark in the entire city.
Standing among the ancient ruins is an incredible feeling. It’s surreal to look at all those temple ruins and think that humans lived there more than a thousand years ago. Also, the Acropolis offers a wonderful view of downtown Athens. The historic site is on a higher elevation than the rest of the city, and the vista of Athens’ rooftops stretches from the ruins. 

Insider Tip: Wear sturdy shoes because the terrain at the Acropolis is very slippery, even in dry weather.

Tickets for the Acropolis are 10€ in the winter season and 15€ in the summer season. The opening hours depend on the season, but the Acropolis is always open until at least 5 PM.

The National Archaeological Museum is one of the most important in Athens. It’s a delight to tour if you’re interested in ancient Greek art and archaeological findings. History enthusiasts tend to enjoy their time at this museum, and the art collection is stunning enough that you can admire it even without being a history buff. 

Don’t miss out on the museum garden, either. The landscaping is gorgeous, and there are loads of pretty trees and plants to see. Walk around the green space first, and then head up the stairs to see the exhibit in the best museum in Athens.

Tickets for the National Archaeological Museum are 6€ in the off-season and 12€ from April to November. The opening hours also depend on the season. 

15. Visit The Meteora Monasteries

The Meteora monastery complex is one of the best places to visit in central Greece, renowned for its cultural heritage and natural beauty. If you’re planning a road trip in the country or just a trip in the off-season, this is by far one of the best landmarks away from the islands.

Come here to see dramatic rock formations with monasteries atop. Six of the original 24 monasteries remain, and the incredible architecture of the place has rightfully earned it a spot on the UNESCO World Heritage Site list. The monasteries were built in the 13th and 14th centuries, all atop the existing pillars. The place is absolutely brilliant, and for me, it’s one of the best places you can visit in the entire country.

Entrance to individual monasteries is charged 3€, but the entrance to the complex is free of charge. Meteora is approximately 4 hours north of Athens, and guided tours of the complex are available from the capital. 

16. Explore Thessaloniki

Thessaloniki is the second-largest city in Greece and a great place to visit if you’ve already been to the capital. This has the vibe of Athens in the sense that you’re staying in a buzzing metropolis full of historic landmarks and ancient ruins. But the crowds are much smaller, so it’s generally a bit easier to enjoy your stay.
Thessaloniki has its fair share of historic landmarks and cultural attractions that offer insight into the lives of the locals. And it’s much easier to discover those attractions when you don’t have to bump elbows with other tourists just to get to a ticket office. 

But even more than history and culture, Thessaloniki is known for Greek food. Seafood, olives, and the delicious Bougatsa are all inviting you to get a taste of Thessaloniki and forget all about Athens for a day or two.

Visit Tzoumerka to see rushing rivers, picturesque villages, and ancient houses built into the cliffs. Although Elafonissi Beach is mesmerizing, there’s not much else to do here other than sunbathing. The sea is very shallow, and you have to walk for ages to reach knee-deep water, so it’s not a good beach for swimming.

Best Time To Visit

The best time to visit Greece is from April to October. Greece is a very popular destination in the summer thanks to the warm weather and countless miles of sandy beaches, so you might want to avoid traveling in July and August. If you don’t like crowds, early spring and late fall are excellent times to be in Greece.
May, June, and September are still good times to visit for smaller crowds and to swim in the sea. The weather is warm enough that you can comfortably go for a swim and lounge on the beach, but the rest of the world hasn’t entirely caught on, so they haven’t all arrived.
Winters in Greece are dreary and wet. It’s not fun walking on slippery cobblestones, and I don’t recommend traveling to Greece from November to March. 

Getting There 

Athens International Airport is the largest one in Greece, so there’s a good chance you’ll land at this airport. A train service is available to take you to downtown Athens, and it’s usually the fastest way of traveling.
The roads leading into the city can get quite congested, so taxis and private transfers can sometimes take longer to get you to the city center. A one-way train ticket is just 9€. 

If you need to get somewhere from Athens, look into trains, buses, ferries, and flights. Greece has plenty of smaller airports, but they’re mostly serviced by local (inexpensive) airlines. 

How Much Time Do You Need

The amount of time you need to go to Greece really depends on how you want to experience the country. If you’re just staying in Athens, you need at least three days to explore the city, preferably five. But if you want to go island hopping on either coast, you’ll need at least seven days to be able to see a few different towns.
Road trips on the mainland are also an option, and you need 7-10 days for those as well. Keep in mind that all the timeframes I’ve listed are the bare minimum; if you can spare two or three weeks for Greece and you’re not afraid of going out and exploring, your days will be filled with amazing adventures and gorgeous views.

Vidal’s works are often that way, as they present themselves in an Escher-esque way, but with her own skill and heart and vision. But things are often just as they should be, and then flipped upside down, or sideways, and yet as your eye follows a path that doesn’t quite feel like reality, each person in the painting seems at peace with the situation. The Marshall Project’s “Inside Story,” an innovative video series that brings vital criminal justice news to audiences behind bars and beyond, returns for its second season with in-depth stories on health care in prisons and jails, correctional staff shortages and the challenges of solving murders in one American city.

Across six episodes, the series will also feature insightful interviews with prominent changemakers in policy, social justice and entertainment, including actor Common and comedian Donnell Rawlings. And rapper G. Dep sat down with host Lawrence Bartley for an exclusive conversation days after his release from prison.

Co-created by Bartley and Donald Washington, Jr., both of whom work at The Marshall Project and were themselves formerly incarcerated, Inside Story brings TMP’s impactful accountability and investigative journalism on the criminal justice system to incarcerated people — and those on the outside, too. In addition to stories built around TMP’s original reporting and those of its partners, the show includes animated first-person essays, explainers and more.

Each episode will be available online at 11 a.m. ET every Thursday, beginning Sept. 26, 2024, on The Marshall Project’s website and YouTube channel.

Prime Minister Justin Trudeau wants Americans to know Canada has more to offer than just “maple syrup and mountains.”

During a Monday night appearance on The Late Show with Stephen Colbert, the Canadian political leader got laughs from the audience as he tried to set Canada apart from the U.S. and boast about what makes the northern nation successful on the world stage.

There were also several more sombre moments from Trudeau’s appearance, with the prime minister noting it’s a “tough time” for many Canadians. Part of the night’s conversation focused on far-right nationalism and growing political division among people in both Canada and the U.S.

Colbert said Trudeau’s main political opponent, Conservative Party of Canada Leader Pierre Poilievre, has been called “the Trump of Canada.”

In response, Trudeau said Canada is not exempt from extremist rhetoric or xenophobia. He did not cite any specific examples.

“We’re not some magical place of unicorns and rainbows all the time,” he said. “The things that we’ve managed to do, we’ve had to work really, really hard at.”

Trudeau mentioned universal health care, ongoing efforts against climate change and dental care for low-income Canadians as policies that “we have to fight for” continually.

“There’s a big argument right now about whether dental care even exists,” Trudeau said. “We’ve delivered it to 700,000 people across the country and my opponent is gaslighting us and saying, ‘Dental care doesn’t even exist yet.’”

Earlier this month, Conservative MP Stephen Ellis said the government has failed in the delivery of subsidized dental care and claimed most Canadians don’t qualify for coverage or must still pay out of pocket for services.

The Canada Dental Care Plan is accepting applications from people over the age of 65, for children under the age of 18 and those who receive the Disability Tax Credit. Applicants need to be confirmed, and then will be enrolled with Sun Life which manages the means-tested plan, which is open to those whose adjusted family net income is less than $90,000 per year and who don’t have access to dental care programs through employer plans, private coverage, or student or pension benefits.

Trudeau’s appearance comes as he is set to face a vote on a non-confidence motion in the House of Commons, put forward by the Conservatives on Tuesday and coming to a vote on Wednesday. If the vote is lost, Canada could see a snap election, but the NDP and Bloc Quebecois have indicated they will support the Liberals in defeating the motion.

“It’s a really tough time for people in Canada right now,” Trudeau said. “People are hurting. People are having trouble paying for groceries, paying for rent, filling up the tank.”

“People are frustrated and the idea that maybe they want an election now is something that my opponents are trying to bank on because people are taking a lot out on me, for understandable reasons,” he said. “I’ve been here, and I’ve been steering us through all these things and people are sometimes looking at change.”

The prime minister said he will “keep fighting” to support Canadians and added that “Canada’s the best country in the world.”

Trudeau described the country’s “beautiful” wilderness and scenery, but maintained “Canada is about the people.”

“It’s a range of people from every possible background who come together and — a little different from the melting pot in the United States where everyone gets to be American — we try to celebrate differences, and people keep their cultures and keep their languages.”

Colbert, while noting that Canada is America’s “closest ally,” asked Trudeau what the two nations fight about.

The prime minister said there are many “small issues that matter” between both countries, but claimed the U.S. pays too much in tariffs on softwood lumber.

This summer, the U.S. announced a 14.54 per cent duty rate on Canadian softwood lumber imports — an increase from the former 8.05 per cent tariff.

Colbert half-joked that many Americans also cross the U.S.-Canada border to buy cheaper drugs outside of the country.

“We’re happy to try and help you out, but it would be a lot easier if you guys had universal health care,” Trudeau said, earning cheers from the in-studio audience.

In lighter moments from Trudeau’s Late Show appearance, he joked Canadians, despite the stereotype for always saying “sorry,” would not apologize for the nominal differences between bacon and back bacon (or as Americans call it, Canadian bacon).

Trudeau has been Canada’s prime minister since 2015. This week, he travelled to New York City ahead of the 79th United Nations General Assembly. This year marks the UN’s first-ever Summit of the Future, which gathers world leaders to discuss themes including peace and security, sustainable development, climate change and human rights.

Trudeau said attending the General Assembly makes him feel both more and less hopeful about the future.

“You have to be fundamentally hopeful in this job, and particularly in this time where challenges are monumental,” he said of politicians. “But if you don’t believe you can actually work with others and make a positive difference, then you’re not in the right line of work.”
